Meatloaf

 

A few years ago a friend gave Laurel and me a cookbook from the "Ovens of Brittany."  This meatloaf is an adaptation of their very fine recipe.  Because of the apples and walnuts I have thought about calling it "Waldorf Meatloaf"  but that may be a little to indulgent. - Chuck Shoecraft

1 1/4 lb ground beef (the leaner the better)
1 package (12 0z.) ground pork sausage (I like Jimmy Dean Regular)
1/4 to 1/2 cup chopped apple (I prefer the larger amount don't make the pieces too small)
1/4 cup minced onion
1/4 cup chopped walnuts
2 eggs
1 slice bread (broken into small pieces)
1 tablespoon dried parsley
1 tablespoon dried basil
1 teaspoon salt
1/2 teaspoon ground black pepper

Preheat oven to 350 degrees.  Combine all ingredients (mix thoroughly but do not over mix or meat will be tough).  Bake 1 hour and 15 minutes.  Let rest for 10 minutes before serving.
